Exciting WEEKEND! and a yummy recipe

Our weekend is pretty exciting!
We are foster parents but only get calls for kids that are in danger or need to be hidden, so far anyway. But a few years ago, Halle was 1 and a half and Payton was 9 months we got a call for premature boy/girl twins. They were SO tiny! We had them for about a month!
We got a call earlier in the week asking us if we would take the twins, now 2.5 for 4 days. I am SO excited to see them again! Brian gets to see them at the State Office Building every now and then, but I haven't seen them since they left! They are arriving today! It will be a busy weekend, but WAY worth it!

So it is not a secret we are TRYING to eat a little healthier, Brian's cholesterol is a HUGE problem and so we are trying to avoid red meat, poor me, I love my red meat!
So here is a completely YUMMY recipe for Turkey Joe's! I ate more than anyone!

Barbecued Turkey Joes

INSTRUCTIONS

1 pound(s) lean ground turkey
1/2 medium bell pepper(s), chopped
1/2 medium sweet red pepper(s), chopped
1/2 medium onion(s), chopped
1/8 tsp cayenne pepper
1 cup(s) barbecue sauce
4 medium mixed-grain hamburger roll(s), sliced in half


Brown turkey in a nonstick skillet coated with cooking spray, about 8 to 10 minutes. Drain off liquid. Add peppers and onion and cook until tender, about 3 minutes.


Add barbecue sauce and cayenne pepper; heat thoroughly, stirring frequently, about 2 minutes.


Top bottom half of buns with turkey mixture; cover with top half of bun and serve.
